Features of Yeastock HG
- It has a strong umami, since free glutamic acid content (*1) is more
than 20% (paste type). - It is a carefully selected, high quality yeast (*2) cultured using patented
proprietary technology. (*3) - With none of the distinctive features peculiar to yeast extract, it can be
used in a variety of menus and is highly versatile.

Standard Type
The standard type product is an “autolyzed” yeast extract made by breaking down fresh yeast with the enzymes contained in the yeast itself. It has a unique aroma, rich flavor, and sophisticated umami. The abundance of vitamins, minerals, and amino acids contained in yeast extract promote fermentation by microorganisms, so it can also be used as a culture medium, as well.

Inactive Dried Yeast Type
Yeastock HG-DY is an inactive dried yeast with a strong umami, cultivated and dried using our proprietary technology from yeast with a high glutamic acid content.
